 EASTERN NOVA SALMON 
Rich and moist; our most popular salmon. These superior salmon are either from Eastern Canada, Norway (or sometimes the Faeroe Islands). They are wood smoked for a slightly salty yet mild taste, with a texture that is pure velvet. On average one pound is approximately 16 slices. The filet mignon of fish. Imported from the icy lakes of Northern Canada or carefully farmed. We skin, bone, then gently smoke our Sturgeon to perfection. Hearty chunks of pink Atlantic or on occasion White King Salmon (color depends upon availability). Cured, then smoked at 160°. This Greengrass classic is noted for its' alluring aroma and unforgettable flavor. Chunk sliced or whole, can be refrigerated 5 to 7 days.
